Before becoming a member of the IBFB (International Brotherhood of Former Bartenders) Mr. Callaway was a Musical Bartender/ Bartender Trainer at BIG (Hyatt Regency Chicago, IL 1988-92), which was one of the world's largest hotel bars with the rarest collection of vintage spirits in the country, which also featured jazz musicians as performing bartenders. He was responsible for creating original drinks/drink menus for Hyatt holiday promotions and special events (inclucing the 1988 MLB All-Star Game) and for teaching "flair" bartending to new employees.

He is the author of Just Shots (unpublished), a non-fiction humorous compilation of bartending anecdotes with recipes for over 700 shooters. He also bartended at the Sheraton Casino in Tunica, MS (1994-96) and Ajax Diner in Oxford, MS (1997-98) before retiring.
